Welcome to the world of competition barbecue judging!
The Kingsford Tour of Champions provides an opportunity for barbecue enthusiasts to judge entries from contenders in the World Championship Barbecue Cooking Contest.
The judging takes place on the Thursday and Friday of the contest, with sessions from 2-4 p.m. and 4-6 p.m. on both days. Judging opportunities are available for all four sessions.
JUDGING: You will be participating in onsite judging for barbecued pork shoulder. A pork shoulder entry is defined by Memphis in May as the portion of the hog containing the arm bone, shank bone and a portion of the blade bone. The pork ham, considered to be a shoulder entry, contains the hind leg bone.
COOKING PROCESS: Teams may cook with either charcoal or wood. Other flammables, i.e. propane, liquid, compressed gas, or electricity may only be used to start the initial fire. No electrical heating devices may be used to hold, warm or cook the entries.
JUDGING CRITERIA: You will be given detailed judging information and scoring criteria in your judges packet and during the judging orientation.
